Roquefort, a cheese, a village. Roquefort in Aveyron, located at the foot of the Rocher du Combalou, listed Grand Site de Midi Pyrénées, is a unique village of its kind. It is there and only there in the deepest cellars that the famous cheese of Roquefort, 1st French AOC is refined.

Le Pays d'Espalion is crossed by the river Lot (formerly "Olt"). Located at the north-east of Rodez, the land stretches in the adjacent Valley and glens, climbing of the Monts d'Aubrac via the road of Cayrol. The municipalities Lassouts, Espalion, Bessuéjouls at the south reach the platform of the Causses and only the village of Cayrol is completely located on the platform of Aubrac. St-Côme d'Olt, Espalion and Bessuéjouls are located on one of the great pilgrimage roads to Saint-Jacques de Compostelle : Via Podensis.
